New pics
Pieces of prep at Uchi: king salmon just filleted and halved, valrohna chocolate and crispy bacon, a fish and his demise, and nori being cut for sushi "belts".
Uchiko! ...exterior walls and window openings
Permitting complete and general contractor selected; Uchiko's "shell" will start construction inside at 4200 N.Lamar hopefully by Jan.7th. More updates to come. It's been a fantastic year at Uchi in 09 and we look forward to serving Austin in the year to come. Merry Christmas to everyone from the Uchi staff!

Sushi specials
The special board at Uchi's sushi bar. Daily arrivals of fresh fish from Tsukiji market and Brown distributing in Maine. Check it out next time you come to eat, as this is the best we have to offer.
the exterior front of Uchiko
The eventual front wall for Uchiko, the other side of this wall is the Uchiko cafe/bar. This area of Uchiko will be dedicated to walk in customers, and the full on dining experience will also be available. In contrast with this and the current Uchi, we're shooting to do mostly reservations in Uchiko's dining and private dining rooms....hopefully nullifying our biggest complaint: the wait.
Once this plywood wall is clad and all exterior walls are complete: the fun starts and we begin building/finishing the Uchiko space!
Another friday's prep!
An array of Uchi goodness. Sake reduction burning off the alcohol for sauces, fish caramel in the works, super fresh king salmon just broken down and portioned into half fillets, and matsutake pickles.
Pics of current Uchiko coming up next!
